Brokkoli Feta Quiche

For brunch, as an office lunch or even for dinner – the quiche is a real all-rounder! The different fillings with which you can pimp the French classic are just as varied as the reasons for eating it. In keeping with the motto “Eat your greens,” today we’re packing a whole head of broccoli into the shortbread base. The spicy feta cheese provides a fine seasoning. All that’s missing is some ham and the quiche is perfect.

By the way, shortcuts are allowed! I also used a ready-made shortcrust pastry for this recipe – after all, you don’t always have the time or inclination to make everything from scratch. Therefore, the recipe is made very quickly and even Feierabend-tauglich.

Brokkoli Feta Quiche

Ingredients

  • 1 pck. shortcrust pastry
  • 150 g feta
  • 1 head of broccoli
  • 100 g ham
  • 200 ml cream
  • 3 eggs
  • salt pepper

Instructions

  • Line a round baking dish with the shortcrust pastry. Blanch broccoli in salted water for about 5 minutes. Crumble the feta and chop the ham. Spread all ingredients evenly on the bottom.
  • Whisk cream and eggs and season with salt and pepper. Pour into the shortcrust base and bake the quiche at 175 °C convection oven for 35 to 40 minutes.
  • Allow the quiche to cool slightly before slicing.
