Chocolate Cake with Cherries and Nuts

Today I share with you the recipe for the cake that I brought to the office on my birthday. Since the transport box was empty at the end of work, I would argue that this one also arrived well.
The cake consists of a simple sponge cake, which is spiced up with cherries, nuts and chocolate shavings. Above still a delicious chocolate icing – simply dreamlike!
The recipe is so simple in execution that it is suitable for absolute beginners. It is inspired by an old English cake recipe called ‘Pound Cake’. In this ‘pound cake’, the basic ingredients of butter, sugar, eggs and flour are used in equal proportions to make a very rich cake that is not dry at all. Here’s the kicker: no baking powder is needed at all if you use it correctly. However, I like to mix in some as insurance.

Chocolate Cake with Cherries and Nuts
Ingredients
- 270 g butter
- 270 g sugar
- 4 eggs
- 270 g flour
- 110 g ground nuts
- 100 g chocolate shavings plain
- 1 jar of cherries
- 1 teaspoon baking powder
- 1 pinch of salt cinnamon, vanilla
- 200 g plain chocolate coating
- 40 g butter
Instructions
- Cream room temperature butter with sugar until fluffy. Add eggs one at a time. Quickly stir in flour, baking powder, salt, cinnamon and vanilla. Carefully fold in nuts, chocolate shavings and cherries. Bake in oven at 160 °C convection oven or 180 °C top/bottom heat for approx. 75 minutes. Test the cake with a chopstick to make sure it is done.
- For the icing, melt the chocolate coating and butter and spread on the cooled cake.
