Creamy Cheese Sauce

If there’s probably one dish I could absolutely sink my teeth into, it would be this one: Pasta in a deliciously creamy cheese and cream sauce. And true to the motto “good things don’t have to be hard”, this delicious pasta dish is conjured up in no time at all. So, off to the stove!
As multitasking kitchen gods, we of course prepare pasta and sauce at the same time. While the pasta is simmering, we leave out the bacon in a small pot and add the cream. Season with pepper and chives and bring everything to the boil. We leave out the salt because of the bacon. The sauce can now continue to simmer until the pasta is al dente. Then we strain it and put it back into the pasta pot. We only have to refine the sauce with some cheese and then it is ready.
Finally, we add the sauce to the pasta and put the lid on. Now we have to wait and twiddle our thumbs. Because something magical is happening in the pot now: the sauce is thickening a bit and its silky consistency is combining wonderfully with every single noodle.

Creamy Cheese Sauce
Ingredients
- 250 g pasta
- 200 ml cream
- 75 g bacon in strips
- 50 g cheese of your choice
- pepper
- Chives
Instructions
- Cook pasta until al dente. Meanwhile, render bacon in a small saucepan. Deglaze with cream and bring to a boil. Simmer for at least five minutes, better longer. Season with pepper and chives. Remove from heat and stir in cheese to dissolve in cream.
- Return strained pasta to pasta pot and pour sauce over it. Mix everything together and cover with a lid. Let rest for at least ten minutes, then serve.
