Wild Garlic Pesto

Spring is coming! With it also all sorts of fresh herbs that you can turn into all sorts of wonderful things. Wild garlic, as a relative of onions and garlic, has a very intense, spicy aroma. One way to use this herb is to make pesto from it. All you need for this is a blender. In upright form or as a blender – with both you will have a fresh pesto in no time. Just a few other ingredients, such as nuts, olive oil and parmesan.

The classic use of a pesto remains, of course, the combination with pasta. But this sauce is also wonderful with potatoes or as a spread on bread. Have fun with the re-cooking.

Wild Garlic Pesto

Ingredients

  • 100 g wild garlic
  • 1 handful of nuts e.g. pine nuts walnuts or almonds
  • olive oil
  • salt pepper
  • 50 g finely grated parmesan

Instructions

  • Wash and dry the wild garlic thoroughly. Cut into pieces and place in a blender or tall container (if using a hand blender) with the nuts.
  • Blend with a small amount of oil. Once a paste is formed, with blender running, slowly drizzle in oil to desired consistency.
  • Fold in parmesan cheese. Season with salt and pepper to taste.
